Grapes harvested manually in the second decade of September, vinified by the traditional method. After crushing and de-icing the grapes, the maceration of the grape must is macerated for a period of 8-12 hours. Fermentation takes place in stainless steel vessels at a controlled temperature of 14 ° С – 16 ° С and keeping on a fine layer of yeast for a minimum of 3 months. Matured for 6 months in French oak barrels.
The creamy Chardonnay is best served with fine rich fish recipes such as turbot, grilled veal chops with mushrooms,and also with seared foie gras and rich cheeses.
