Grapes harvested manually in the second decade of September, vinified by the traditional method. After crushing and de-icing the grapes, the maceration of the wort follows for a period of 10-12 hours. Fermentation takes place in stainless steel vessels at a controlled temperature of 14 ° С and the Sur Lie method is applied.
A tasteful and flavor balanced blend, suitable for French and Swiss cheeses like Camembert or fresh seafood dishes such as butter braised scallops.
